Free free to add delicious Fresh Herbs or Fresh Fruits such as Orange, Grapefruit, Grapes or Strawberries.
You will need:
1/2 Cup Couscous per person.
Hot Stock (Vegetable or Chicken is fine).
Fresh washed Spinach Leaves.
1/4 Cup Sliced Almonds.
100g Feta.
Virgin Olive Oil.
Cook the Couscous as per the packet instructions. (I use stock instead of just water, as it give it a little bit more flavour.)
Allow to sit and cool for a few minutes.
Dice up the Feta and leave a little to crumble on top.
Mix together the Couscous and any fruits you wish.
Place the Spinach on the bottom of the dish.
Add the Couscous mixture.
Sprinkle the top with Almond and Feta and drizzle with Olive Oil.
Serve and Enjoy.
