Sunday is usually a relaxed affair in our house and especially Sunday morning. I love to do pancakes for breakfast as I tend to have more time and can wait for them to cook. I usually do a large batch and place the leftovers in the fridge so they can be heated quickly in the toaster or on a hot pan for another morning during the week.
Here's what you'll need:
300g Self Raising Flour.
2 Eggs.
2 Tablespoons Caster Sugar.
300ml Milk (I like to use 200ml of milk and 100ml of buttermilk).
1/2 teaspoon of Baking Powder.
Dash of Vanilla (Optional).
This allows your batter to stand for a few minutes.
I don't use butter on my pan because I use a non stick - always choose the healthy option.
As the batter stands it will thicken slightly.
As they reach turning point small bubbles will develop on the top and they will have an uneven surface.
Flip over the pancakes and allow to cook on the other side.
