After a long and punishing week my parent would close the shop early each Sunday and we would enjoy a beautiful Sunday Roast together. However, having to reopen at 7pm meant we always had tea at 6 on Sunday Evenings. As in many homes, Sunday tea was usually left over meat from the Roast and salad, bread or a mix of both. Mum would always make a large bowl of this beautiful light Potato Salad as we all relished and enjoyed it so much. I hope you will too.

For my Traditional Irish Potato Salad you will need:
Leftover Cooked Potato.
Onion/Spring Onions.
Seasoning.
Parsley
Mayonnaise.
Add the chopped fresh Herbs too.
